夏天总喜欢吃点酸辣口味的开胃,酸汤肥牛就是个很好的选择,简单易上手,烹饪时间短,鲜嫩的肥牛吸收酸、辣、咸、香的汤汁令人垂涎欲滴自不必多说,就连剩下的汤底留着煮面也是让人欲罢不能。 这道菜想要做出好看、好吃的金汤最重要的是要选黄灯笼椒,汤色和味道主要都是出自它,不知道哪里买的小伙伴可以去大点的超市看看基本上都会有的,实在买不到还有某宝。 想要汤底清澈的话肥牛卷必须要焯次水,不然会有大量的浮沫,焯水的时候注意看到肥牛变色后就要立马捞出,时间久了肉质变老,口感就会变差。捞的时候夹住肥牛在锅里摆动几下撇开浮沫再出锅。

肥牛卷300克金针菇200克黄灯笼椒50克绿辣椒20克红辣椒20克剁辣椒20克大蒜30克生姜15克白醋30克鸡精适量盐适量
